Crispy Zucchini Side Dish

A delightful and crunchy side dish made with fresh zucchini, perfect for any occasion.

Ingredients

  • 2 medium Zucchini, sliced into 1/4 inch rounds
  • 1 cup Breadcrumbs
  • 1/2 cup Parmesan Cheese (optional)
  • 2 large Eggs
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Italian Herbs

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and slice the zucchinis into even rounds.
  3. Pat them dry with a paper towel to remove moisture.
  4. Whisk the eggs in one bowl.
  5. Combine breadcrumbs, Parmesan, and seasonings in another bowl.
  6. Dip each zucchini slice into the egg, then coat in breadcrumbs.
  7. Arrange the slices on a parchment-lined baking sheet.
  8. Bake for 20-25 minutes, flipping halfway through.
  9. Serve hot with your favorite dipping sauce.

Notes

For meal prep, bread the zucchini ahead of time and refrigerate. For a quicker method, use an air fryer.
