Zucchini Orange Cake

A delightful and moist cake made with zucchini and infused with bright orange flavors, perfect for any occasion.

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 2 eggs
  • 1/2 cup butter, melted
  • 1 cup grated zucchini
  • 1/2 cup orange juice
  • 2 tsp orange zest

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan, lining the bottom with parchment paper.
  2. Whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and sugar in a large mixing bowl.
  3. Beat the eggs in a separate medium bowl, then add the melted butter, grated zucchini, orange juice, and orange zest.
  4. Fold the wet ingredients into the dry mixture until just combined.
  5. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool the cake in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For an even lighter cake, avoid overmixing the batter and allow the zucchini to drain slightly before adding.
