Crispy zucchini fritters served with a cool and creamy garlic-dill yogurt sauce, perfect for appetizers or healthy snacks.

Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup chopped fresh dill
  • Oil for frying
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. Prep the zucchini: Place the grated zucchini in a colander and sprinkle with salt. Let sit for about 10 minutes to draw out excess moisture.
  2. Drain and press: After 10 minutes, press the zucchini firmly with a clean dish towel to extract as much liquid as possible.
  3. Mix ingredients: In a mixing bowl, combine the drained zucchini, flour, eggs, Parmesan cheese, black pepper, garlic powder, and chopped dill. Stir until blended into a thick batter.
  4. Heat the skillet: Place a skillet over medium heat and add oil to coat the bottom.
  5. Form the fritters: Drop spoonfuls of the batter into the skillet and flatten slightly with the back of the spoon.
  6. Fry to golden perfection: Fry until golden brown, about 3-4 minutes per side.
  7. Make the sauce: In a separate bowl, mix together Greek yogurt, lemon juice, minced garlic, chopped dill, salt, and pepper.
  8. Serve and enjoy: Plate the zucchini fritters warm with garlic-dill yogurt sauce on top or alongside for dipping.

Notes

Make-ahead tips: Batter can be stored in the fridge for up to 2 hours before frying. Consider customizing with fresh herbs or spices.
