Zucchini Cake

A moist and heavenly Zucchini Cake topped with rich cream cheese frosting, perfect for any occasion.

  • 2 cups grated zucchini
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts
  • 4 ounces cream cheese
  • 1/2 cup butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Combine in a large bowl the grated zucchini, granulated sugar, brown sugar, vegetable oil, and eggs. Mix well.
  3. Mix the dry ingredients in another bowl: flour, baking powder, baking soda, cinnamon, and salt.
  4. Combine the dry ingredients into the wet mixture gradually, stirring until just combined.
  5. Fold in the walnuts gently.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Prepare the frosting by beating the cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until fluffy.
  8. Cool the cake before frosting. Spread the frosting generously over the cooled cake.
  9. Serve and enjoy your delicious Zucchini Cake!

Notes

This cake is perfect for potlucks and gatherings and keeps well. For a lighter version, consider using applesauce instead of oil.
