Zesty Lime Shrimp and Avocado Salad

A refreshing summer salad bursting with flavor featuring succulent shrimp, creamy avocado, and zesty lime.

Ingredients

  • 1 lb fresh shrimp, peeled and deveined
  • Juice of 2 limes
  • 2 tablespoons extra virgin olive oil
  • 2 ripe avocados, diced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Marinate the shrimp by placing them in a bowl and drizzling with lime juice and olive oil. Let marinate for about 15 minutes.
  2. Heat a non-stick skillet over medium heat and add the marinated shrimp. Sauté for about 3-4 minutes, flipping halfway, until they turn pink and opaque.
  3. Combine the diced avocados, chopped red onion, and cilantro in a large mixing bowl and gently toss together.
  4. Add the cooked shrimp to the salad mixture and combine.
  5. Season with salt and freshly cracked pepper to taste.
  6. Serve the salad chilled, garnished with extra cilantro on top.

Notes

Best enjoyed fresh; combine ingredients just before serving to prevent avocado browning.
