  • 2 medium Zucchini, sliced into quarter-inch rounds
  • 1 cup All-Purpose Flour
  • 2 large Eggs, beaten
  • 1 cup Breadcrumbs (fine or panko)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Italian herbs (optional)
  • Oil for frying

Instructions

  1. Prep the zucchini by washing, drying, and slicing it into quarter-inch rounds.
  2. Salt the slices and let them sit for 10-15 minutes before patting them dry.
  3. Set up a dredging station with flour, beaten eggs, and breadcrumbs in separate bowls.
  4. Dredge each zucchini slice in flour, then eggs, and finally coat with breadcrumbs.
  5. Heat oil in a skillet and fry the breaded zucchini in a single layer until golden brown, about 2-3 minutes per side.
  6. Transfer the fried zucchini to paper towels to drain excess oil.
  7. Serve with your favorite dipping sauce.

Notes

For extra crunch, consider double-dipping the zucchini slices before frying and try using an air fryer for a lighter option.
