Crispy Fried Zucchini

Delightfully crispy fried zucchini made with fresh, summer zucchinis for a satisfying side dish.

Ingredients

  • 2 medium zucchinis
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/2 cup cornmeal (optional)
  • Salt to taste
  • Pepper to taste
  • 1 tsp garlic powder
  • Oil for frying

Instructions

  1. Wash and dry the zucchinis, then slice into 1/4 inch thick half-moons.
  2. Sprinkle the zucchini slices with salt and let sit for 20-30 minutes.
  3. Rinse and pat the zucchini dry to remove excess moisture.
  4. Set up a dredging station with flour, eggs, and breadcrumbs in separate bowls.
  5. Dip each zucchini slice into the flour, then the eggs, and finally coat with breadcrumbs.
  6. Heat 1/4 inch of oil in a skillet over medium heat.
  7. Fry the zucchini slices for 2-3 minutes on each side until golden and crispy.
  8. Transfer to a plate lined with paper towels and season with salt.

Notes

For an air fryer option, cook at 400°F for about 10 minutes.
