Tuscan Butter Beans with Spinach and Sun-Dried Tomatoes

  • 1 can white beans (cannellini or navy)
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil for garnish (optional)

Instructions

  1. Melt the butter in a large skillet over medium heat until it sizzles gently.
  2. Sauté the minced garlic in the melted butter for about 1 minute, being careful not to let it brown.
  3. Incorporate the chopped sun-dried tomatoes and cook for another 2-3 minutes.
  4. Add the drained and rinsed white beans, salt, black pepper, and red pepper flakes, and cook for about 5 minutes.
  5. Wilt the fresh spinach into the mixture and cook for about 2-3 minutes until tender.
  6. Finish with grated Parmesan cheese and garnish with fresh basil before serving.
  7. Serve warm as a side dish or main course.

Notes

For a vegan option, replace butter with olive oil and omit cheese. Optional herbs and spices can be adjusted to taste.
