Tomato Zucchini Casserole

A delightful casserole filled with layers of fresh zucchini and tomatoes, topped with melting cheese for a comforting meal.

Ingredients

  • 2 medium zucchinis, thinly sliced
  • 4 plum tomatoes, thinly sliced
  • 1 cup sharp Cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease your baking dish with a little olive oil.
  3. Layer half of the sliced zucchini evenly across the bottom of the dish.
  4. Add half of the sliced tomatoes on top of the zucchini.
  5. Sprinkle with salt, pepper, oregano, and garlic powder.
  6. Spread half of the shredded Cheddar and grated Parmesan cheese over the vegetables.
  7. Repeat the layers with the remaining zucchini, tomatoes, and cheeses.
  8. Drizzle the top with remaining olive oil.
  9. Cover the dish with foil and place it in the oven.
  10. Bake for 25 minutes.
  11. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden brown.
  12. Let it cool slightly before serving.

Notes

Feel free to customize with your favorite vegetables or cheese. Make ahead and bake just before serving for convenience.
