  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter and brown sugar until light and fluffy.
  3. Add the pumpkin puree, egg, and vanilla extract into the mixture and mix until fully combined.
  4. In another bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually add the dry ingredients to the wet ingredient mixture, mixing gently until just combined.
  6. Using a spoon, drop spoonfuls of dough onto a baking sheet lined with parchment paper.
