Tangy Honey Lime Chicken Stack

  • 1/4 cup honey
  • 1/4 cup fresh lime juice (about 23 limes)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chopped fresh cilantro (for garnish)
  • 1 avocado, sliced (for serving)
  • 1 cup cooked rice (for serving)
  • Lime wedges (for serving)

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the honey, lime juice, soy sauce, olive oil, minced garlic, ground cumin, paprika, salt, and black pepper until well combined.
  2. Marinate the Chicken: Place your chicken breasts in a zip-top bag or shallow dish. Pour the marinade over them, ensuring each piece is well coated. Seal the bag tightly or cover the dish, then refrigerate for at least 30 minutes.
  3. Preheat the Grill: Prepare your grill or grill pan over medium-high heat.
  4. Remove and Discard: Take the chicken from the marinade, allowing excess marinade to drip off before discarding the leftover marinade.
  5. Grill the Chicken: Place the chicken on the grill, cooking for 6-7 minutes on one side. Flip and cook for an additional 5-6 minutes or until the internal temperature reaches 165°F (75°C).
  6. Let it Rest: Remove the chicken from the grill and let it rest for about five minutes.
  7. Assemble the Stack: Layer your grilled chicken atop a bed of fluffy rice. Add slices of avocado and a sprinkle of cilantro. Serve with lime wedges.

Notes

Marinate the chicken for at least 30 minutes, but two hours brings out the best flavor. You can also cook the rice ahead of time for convenience.
