Taco Soup

A hearty and comforting Taco Soup that encapsulates the flavor of tacos in a cozy soup format, perfect for chilly nights and gatherings.

Ingredients

  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • ¼ cup water
  • 1 jar Tostitos Salsa Con Queso
  • 1 can potato soup
  • 1¼ cups sour cream
  • 1 can fire-roasted diced green chilis
  • 1¼ cups beef broth
  • ½ cup chicken broth
  • 1 cup frozen corn
  • 1 cup pinto or black beans

Instructions

  1. Brown the ground beef in a large pot over medium-high heat until it’s browned, stirring frequently and draining off excess grease.
  2. Stir in the taco seasoning and water until the beef is well-coated.
  3. Transfer the seasoned beef to a large pot if not already in one, and mix in the Tostitos Salsa Con Queso, potato soup, sour cream, beef broth, and chicken broth. Stir until smooth.
  4. Add the fire-roasted diced green chilis, frozen corn, and black or pinto beans, stirring to combine.
  5. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes, stirring occasionally.
  6. Serve hot, garnished with tortilla chips and your favorite toppings like cilantro or avocado.

Notes

For enhanced flavor, consider making the soup a day ahead and reheating. You can also customize with additional vegetables.
