Taco Coleslaw

A vibrant and crunchy Taco Coleslaw that combines fresh vegetables with a creamy dressing and zesty taco seasoning, perfect as a side dish or topping.

  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1/2 cup diced red onion
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons taco seasoning
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Optional: Chopped cilantro and jalapeños for garnish

Instructions

  1. In a large bowl, combine the shredded cabbage, shredded carrots, and diced red onion. Toss these colorful veggies together, relishing the crunch.
  2. In a separate smaller bowl, whisk together the mayonnaise, sour cream, taco seasoning, lime juice, and add salt and pepper for seasoning.
  3. Pour the creamy dressing over the cabbage mixture and toss until the vegetables are well coated.
  4. Allow the coleslaw to sit for at least 30 minutes before serving to meld the flavors.
  5. Serve the Taco Coleslaw as a side dish or topping, garnished with fresh chopped cilantro and jalapeños if desired.

Notes

For optimal texture, dress the coleslaw just before serving. Can be made ahead, but best eaten fresh.
