Sweet & Spicy Thai Mango Salad

A vibrant salad bursting with the sweetness of ripe mangoes, crunchy vegetables, and a spicy kick from red chilies, perfect for any gathering.

  • 2 ripe mangoes, diced
  • 1 red bell pepper, diced
  • 1 small cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 12 red chilies, chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tablespoon fish sauce (or soy sauce for a vegetarian option)
  • 1 tablespoon honey or agave syrup
  • Salt to taste

Instructions

  1. Combine the diced mangoes, bell pepper, cucumber, red onion, chilies, and cilantro in a large bowl. Stir gently to allow textures to intermingle.
  2. Whisk together the lime juice, fish sauce (or soy sauce), honey (or agave), and a pinch of salt in a small bowl. Taste and adjust flavoring.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for 30 minutes to enhance flavors.

Notes

For a smoky twist, grill the mango and bell pepper. Chop ingredients ahead but dress before serving to maintain freshness.
