A savory and sweet chicken dish simmered in pineapple and soy sauce, perfect for any occasion.

  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. Place the boneless chicken breasts firmly in the slow cooker, spreading them out evenly.
  2. In a mixing bowl, combine the pineapple chunks, soy sauce, brown sugar, rice vinegar, minced garlic, ground ginger, and black pepper. Whisk everything together until you achieve a harmonious blend.
  3. Pour this luscious sauce over the chicken, ensuring it’s well coated.
  4. Cover the slow cooker, setting it to low for 6-8 hours or high for 3-4 hours.
  5. If you want a thicker sauce, mix the cornstarch with water in a small bowl and add it to the slow cooker in the last 30 minutes.
  6. Once cooked, shred the chicken using two forks if desired, and serve it over fluffy rice or delicate noodles.

Notes

For a tropical twist, pair with steamed jasmine rice or coconut rice.
