Stuffed Peppers

Hearty stuffed peppers filled with savory ground beef, rice, and tomato sauce, topped with cheese for a comforting meal.

  • 4 bell peppers, assorted colors
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can (15 oz) tomato sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Chop the tops finely and set aside for later use.
  4. Cook the ground beef in a skillet over medium heat until browned, then drain excess fat.
  5. Stir in the cooked rice, tomato sauce, chopped bell pepper tops, garlic powder, onion powder, salt, and pepper.
  6. Stuff each pepper generously with the beef mixture.
  7. Place the stuffed peppers upright in a baking dish and cover with aluminum foil.
  8. Bake for 30 minutes.
  9. If desired, uncover and sprinkle cheese on top; bake for an additional 10 minutes.
  10. Serve warm and enjoy!

Notes

Make-ahead: Prepare the filling ahead of time for convenience. Customize your filling with different proteins or vegetables.
