Ingredients

  • 2 pounds of potatoes (Russets or Yukon Gold)
  • 1/2 cup of milk
  • 1/4 cup of butter
  • 1 cup of shredded cheese (cheddar or your choice)
  • 1/2 cup of cooked and crumbled bacon (or sautéed mushrooms for a vegetarian option)
  • Salt and pepper to taste
  • 1/4 cup of chopped green onions (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the potatoes in a large pot of salted water until they are fork-tender (about 15-20 minutes).
  3. Mash them with milk and butter until you achieve a smooth and creamy consistency.
  4. Stir in cheese, bacon, salt, and pepper until well combined.
  5. Grease a muffin tin with cooking spray or butter.
  6. Spoon the mashed potato mixture into each cup, creating nests in the center.
  7. Bake for 20-25 minutes, letting the edges turn golden.
  8. Remove from the oven and finish with a sprinkle of green onions, if desired.

Notes

You can prepare the potato mixture a day in advance. Store in the fridge and bake before serving for best results.
