Stuffed Chile Casserole

A deliciously simple yet elegant dish featuring roasted chiles, creamy cheese, and a rich egg mixture baked to golden perfection.

  • 12 ounces whole roasted green chiles
  • ½ lb Monterey Jack cheese, sliced into sticks
  • 2 large eggs (room temperature)
  • ½ cup all-purpose flour
  • 1 teaspoon kosher salt
  • 2 cups whole milk
  • 1 cup shredded Jack cheese
  • Garnish options: fresh cilantro, pico or salsa, fresh avocado or guacamole, and sour cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. Rinse the chiles under cold water, slice them open, and remove the seeds.
  3. Cut your cheese into narrow sticks, and place 1-2 sticks inside each chile.
  4. In a bowl, beat the eggs, whisking in the flour, salt, and milk until smooth.
  5. Pour the egg mixture over the chiles and sprinkle the grated cheese on top.
  6. Bake for 1 to 1 ½ hours until golden brown and firm to the touch.
  7. Serve immediately and garnish with your favorite toppings.

Notes

Make ahead and refrigerate overnight. Extend baking time if prepared in advance.
