  • 1/4 cup cilantro (chopped, can be omitted)
  • 1/3 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1/3 cup sour cream (or more Greek yogurt)
  • 2 tablespoons lime juice (or lemon juice)
  • 1 teaspoon chili powder (adjust according to taste)
  • Salt and pepper (to taste)

Instructions

  1. Prepare the corn: If using fresh corn, husk the cobs and boil them for 3-5 minutes until tender. Drain and allow to cool. For convenient canned corn, simply drain and rinse.
  2. Chop fresh veggies: Chop the cucumber, cherry tomatoes, and onion into bite-sized pieces.
  3. Mix the dressing: In a large mixing bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  4. Fold in the ingredients: Gently fold the corn, diced cucumber, tomatoes, onions, and feta cheese into the dressing.
  5. Chill and serve: Allow your salad to chill in the refrigerator for at least 30 minutes before serving.

Notes
