Street Corn Creamy Cucumber Chicken Salad

A vibrant salad combining grilled chicken, sweet corn, and crisp cucumbers in a creamy dressing, perfect for summer gatherings.

  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Instructions

  1. Prep the ingredients: Grill or roast the chicken and corn until fully cooked. Drain and rinse canned corn if using.
  2. Dice the vegetables: Chop cucumber and finely slice red onion into bite-sized pieces.
  3. Mix the dressing: In a mixing bowl, combine mayonnaise and Greek yogurt. Whisk in lime juice, smoked paprika, salt, and pepper until smooth.
  4. Combine ingredients: In a large bowl, add diced chicken, corn, cucumber, and red onion. Pour dressing over and toss gently to coat.
  5. Garnish and serve: Optionally sprinkle with crumbled feta. Enjoy fresh or let chill for 30 minutes for flavors to meld.

Notes

Prepare salad a day in advance but add dressing just before serving to keep veggies crisp. Can substitute proteins and customize with other vegetables.
