Street Corn Chicken Casserole

A delicious and comforting casserole blending tender chicken, sweet roasted corn, and creamy cheese, topped with crispy tortilla chips and fresh cilantro.

  • 2 cups cooked chicken, shredded
  • 1 can roasted corn, drained
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup cream of chicken soup
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup tortilla chips, crushed (for topping)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, roasted corn, sour cream, cream of chicken soup, lime juice, chili powder, salt, and pepper in a large mixing bowl.
  3. Transfer the mixture to a greased baking dish and spread it evenly.
  4. Top with shredded cheese and crushed tortilla chips.
  5. Bake in the preheated oven for 25-30 minutes until heated through and the cheese is melted.
  6. Garnish with fresh cilantro before serving.
