A vibrant and flavorful street corn chicken bowl featuring juicy chicken, sweet elote-style corn, creamy sauce, and topped with cotija cheese and fresh cilantro.

Ingredients

Scale
  • 2 cups cooked elote-style corn
  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup cotija cheese
  • Fresh cilantro for garnish

Instructions

  1. Create the creamy mixture: In a mixing bowl, blend the mayonnaise, sour cream, and half of the cotija cheese until smooth and creamy. Set aside.
  2. Season the chicken: Generously season your boneless chicken breasts with chili powder, garlic powder, salt, and pepper.
  3. Cook the chicken: Heat olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side until beautifully browned and cooked through.
  4. Rest and slice: Remove the chicken from the skillet and let it rest for a few minutes, then slice it into pieces.
  5. Assemble the bowl: Layer the cooked elote-style corn, sliced chicken, and the creamy mixture in a serving bowl.
  6. Garnish: Sprinkle the remaining cotija cheese and fresh cilantro on top.
  7. Serve immediately and enjoy!
