Strawberry Shortcake Cheesecake Rolls are a delightful dessert that combines the flavors of strawberry shortcake and cheesecake in a fun, rolled format.

  • 1/2 cup sugar
  • 1 package cream cheese (8 oz), softened
  • 1/2 cup whipped cream
  • 1 teaspoon vanilla extract
  • 1 package of sponge cake or ladyfingers
  • Powdered sugar for dusting

Instructions

  1. In a bowl, mix sliced strawberries with sugar and let them sit for about 30 minutes to release their juices.
  2. In another bowl, beat the softened cream cheese, whipped cream, and vanilla extract until smooth and creamy.
  3. Lay out the sponge cake or ladyfingers on a flat surface.
  4. Spread the cream cheese mixture evenly over the cake.
  5. Add a layer of the sugared strawberries on top of the cream cheese mixture.
  6. Carefully roll the cake into a log shape.
  7. Wrap the roll in plastic wrap and refrigerate for at least 2 hours.
  8. Once chilled, slice the roll into pieces and dust with powdered sugar before serving.

Notes

  • For a richer flavor, you can add a bit of lemon zest to the cream cheese mixture.
