Strawberry Rhubarb Oatmeal Bars

Delicious oatmeal bars filled with a sweet and tart strawberry-rhubarb jam, perfect for spring and summer.

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup strawberry-rhubarb jam
  • 1/2 cup chopped rhubarb (fresh or frozen)
  • 1/2 cup chopped strawberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 9×9 inch baking pan by greasing it generously.
  2. Combine rolled oats, flour, brown sugar, granulated sugar, baking soda, and salt in a mixing bowl.
  3. Add softened butter and blend until the mixture resembles coarse crumbs.
  4. Press half of the oat mixture into the bottom of the baking pan.
  5. Spread the strawberry-rhubarb jam over the crust, covering all corners.
  6. Sprinkle chopped rhubarb and strawberries on top of the jam layer.
  7. Crumble the remaining oat mixture over the fruit.
  8. Bake for 25-30 minutes until the top turns golden brown.
  9. Allow the bars to cool completely in the pan before cutting.

Notes

Best enjoyed fresh, but can be stored in an airtight container for up to three days or frozen for up to three months. Microwave individual bars for 10-15 seconds to reheat.
