  • 2 tablespoons rice vinegar
  • 2 tablespoons smooth peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh lime juice
  • 1 garlic clove, minced

Instructions

  1. Prepare your vegetables: Begin by thinly shredding the cabbage and carrots. Slice the red bell pepper and cucumber into thin strips. Finely chop the cilantro and mint, and set aside the roasted peanuts for a crispy topping.
  2. Mix the salad: In a large mixing bowl, combine shredded cabbage, carrots, bell pepper, cucumber, cilantro, mint, and peanuts. Toss gently to mix everything but keep the veggies intact.
  3. Craft the peanut dressing: In a separate bowl, prepare the dressing by whisking together smooth peanut butter, rice vinegar, soy sauce, honey, sesame oil, lime juice, and minced garlic until smooth and creamy. If needed, add a splash of water to thin it out to your desired consistency.
  4. Combine and rest: Drizzle the dressing over the salad mixture and toss thoughtfully until all ingredients are coated. Allow it to rest for about 10 minutes before serving so the flavors meld beautifully.
