Spicy Mexican Corn Bites

Crispy wonton cups filled with a spicy, creamy mixture of sweet corn, chipotle, and cotija cheese that brings the flavors of Mexico to your table.

  • 1 cup Sweet Corn
  • 1/2 cup Mayonnaise
  • 1 tsp Chipotle Powder
  • 1 tbsp Lime Juice
  • 1/2 cup Crumbled Cotija Cheese
  • 12 Wonton Cups
  • 1/4 cup Fresh Cilantro, chopped
  • 1/2 tsp Chili Powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the roasted corn with mayonnaise, chipotle powder, lime juice, and crumbled cotija cheese in a bowl.
  3. Place the wonton cups into a muffin tin.
  4. Fill each wonton cup generously with the corn mixture.
  5. Bake for 10-12 minutes or until golden brown.
  6. Remove from the oven and top with freshly chopped cilantro and chili powder.

Notes

These bites are perfect for parties and can be made-ahead. Keep an eye on them while baking to prevent overcooking.
