  • 4 cups chicken or vegetable broth
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • Salt and pepper to taste
  • 4 slices bread
  • 4 slices cheddar cheese
  • Butter for grilling

Instructions

  1. Sauté the aromatics: In a large pot over medium heat, add a drizzle of oil and sauté the chopped onions, minced garlic, and diced jalapeños until softened and fragrant—around 5-7 minutes.
  2. Add broth: Pour in the chicken or vegetable broth and bring to a boil.
  3. Incorporate cheese: Reduce heat to a simmer, then stir in the softened cream cheese and shredded cheddar until smooth.
  4. Finish with milk and seasoning: Add the milk and stir until fully blended, then season with salt and pepper.
  5. Create grilled cheese dippers: Butter one side of each bread slice, place cheddar between two slices, and grill until golden brown.
  6. Serve and enjoy: Ladle hot soup into bowls, serve alongside grilled cheese dippers.

Notes

This soup can be made ahead and stored in the fridge for up to three days. Reheat before serving.
