Southern-Style Honey Butter Cornbread Poppers

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup honey
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 cup fresh corn kernels
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a mini muffin tin generously.
  2. Mix together the cornmeal, flour, sugar, baking powder, and salt until well combined.
  3. Whisk together the buttermilk, honey, eggs, and melted butter in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the fresh corn and shredded cheddar cheese.
  6. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
  7. Bake for 12-15 minutes or until the tops turn golden brown.
  8. Allow to cool slightly before serving, and enjoy them warm with a drizzle of honey butter.

Notes

For added flavor, consider mixing in jalapeños for spice or use pepper jack cheese instead of cheddar.
