  • 1 lb Yukon Gold potatoes, peeled and cut into chunks

  • 2 cups beef broth

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the beef: In a large slow cooker, lay the beef chunks evenly. Generously season with salt and pepper.
  2. Layer on the aromatics: Add the chopped onion on top of the beef, then dot with garlic butter.
  3. Pour the beef broth over the layered ingredients.
  4. Add the Yukon Gold potatoes atop the meat mixture.
  5. Set the slow cooker on low and cook for 7-8 hours.
