- 4 cups yellow squash, sliced
- 1 cup onion, chopped
- 1 cup cheddar cheese, shredded
- 1 cup sour cream
- 1 cup crushed crackers
- 1/2 cup butter, melted
- 2 eggs, beaten
- Salt and pepper to taste
- Preheat the oven to 350°F (175°C).
- In a large pot, boil the sliced squash and chopped onion until tender, about 10 minutes.
- Drain the squash and onion, then mash them together in a bowl.
- Add the shredded cheddar cheese, sour cream, melted butter, beaten eggs, salt, and pepper to the mashed mixture and stir until well combined.
- Pour the mixture into a greased baking dish.
- Top with crushed crackers and a little extra melted butter.
- Bake for 30-35 minutes or until the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add diced jalapeños.
- Can substitute zucchini for yellow squash.
- Leftovers can be stored in the refrigerator for up to 3 days.
