Slap Your Mama It’s So Delicious Southern Squash Casserole Recipe You’ll Love!

A delightful Southern dish featuring squash, cheese, and a crunchy topping that will have you saying ‘Slap Your Mama!’

Ingredients

  • 4 cups yellow squash, sliced
  • 1 cup onion, chopped
  • 1 cup cheddar cheese, shredded
  • 1 cup sour cream
  • 1 cup crushed crackers
  • 1/2 cup butter, melted
  • 2 eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, boil the sliced squash and chopped onion until tender, about 10 minutes.
  3. Drain the squash and onion, then mash them together in a bowl.
  4. Add the shredded cheddar cheese, sour cream, melted butter, beaten eggs, salt, and pepper to the mashed mixture and stir until well combined.
  5. Pour the mixture into a greased baking dish.
  6. Top with crushed crackers and a little extra melted butter.
  7. Bake for 30-35 minutes or until the top is golden brown.
  8. Let it cool for a few minutes before serving.

Notes

  • For a spicier version, add diced jalapeños.
  • Can substitute zucchini for yellow squash.
  • Leftovers can be stored in the refrigerator for up to 3 days.
