Shrimp Orzo in Lemon Garlic Sauce

  • 1 lb shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 lemon, juiced and zested
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by bringing a large pot of salted water to a boil and add the orzo pasta. Cook according to package instructions until al dente, about 8-10 minutes. Drain the pasta and set it aside.
  2. In a large skillet, pour in the olive oil and heat it over medium heat. Once it shimmers, add the minced garlic and sauté for about 1 minute, stirring constantly until fragrant and golden.
  3. Introduce the shrimp to the skillet and sauté until the shrimp turns pink and opaque, about 3-4 minutes.
  4. Once the shrimp is cooked, stir in the lemon juice, lemon zest, and chicken broth. Bring the mixture to a gentle simmer.
  5. Add the cooked orzo to the skillet and toss gently to combine with the shrimp and sauce. Season with salt and pepper to taste.
  6. Finally, sprinkle fresh parsley over the top just before serving.

Notes

Make-ahead tips: Cook orzo and shrimp in advance, storing them separately. Reheat in a skillet with chicken broth to restore texture.
