Shrimp & Avocado Summer Rolls with Peanut Sauce: A Fresh Delight!

A refreshing and healthy dish featuring shrimp and avocado wrapped in rice paper, served with a delicious peanut sauce.

  • 8 rice paper wrappers
  • 1 lb shrimp, cooked and peeled
  • 1 ripe avocado, sliced
  • 1 cup lettuce, shredded
  • 1/2 cup carrots, julienned
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 12 tablespoons water (to thin sauce)

Instructions

  1. Prepare all ingredients by cooking shrimp, slicing avocado, and julienning carrots.
  2. Soak rice paper wrappers in warm water for about 10-15 seconds until soft.
  3. Place a wrapper on a flat surface and layer with lettuce, shrimp, avocado, carrots, cilantro, and mint.
  4. Fold the sides of the wrapper over the filling and roll tightly from the bottom up.
  5. Repeat with remaining wrappers and filling.
  6. In a bowl, mix peanut butter, soy sauce, honey, lime juice, and water until smooth to create the peanut sauce.
  7. Serve the summer rolls with the peanut sauce for dipping.

Notes

  • For a vegetarian option, substitute shrimp with tofu.
  • Make sure to keep the rolls covered with a damp cloth to prevent them from drying out.
  • Feel free to add other vegetables like bell peppers or cucumber for extra crunch.
