Sheet Pan Garlic Herb Chicken and Veggies

A one-pan dish featuring juicy chicken breasts, earthy potatoes, and colorful vegetables infused with garlic and herbs.

  • 4 chicken breasts
  • 4 medium potatoes, diced
  • 2 cups mixed vegetables (bell peppers, zucchini, and carrots)
  • 1/4 cup garlic butter
  • 1 tablespoon olive oil
  • 1 tablespoon dried herbs (thyme, rosemary, or oregano)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the diced potatoes and mixed vegetables in a large mixing bowl.
  3. Drizzle olive oil over the mixture, season with salt, pepper, and dried herbs, then toss until coated.
  4. Place the seasoned chicken breasts on a sheet pan and surround them with the potatoes and veggies.
  5. Drizzle garlic butter over the chicken and vegetables.
  6. Bake for about 25-30 minutes until the chicken reaches an internal temperature of 165°F.
  7. Serve warm and enjoy your meal.

Notes

You can marinate the chicken in garlic butter and herbs up to 24 hours in advance for deeper flavor.
