Sesame Noodle Salad

A vibrant salad featuring sesame-soaked noodles and crunchy vegetables, drizzled with a creamy sesame dressing.

  • 8 oz noodles (soba or spaghetti)
  • 1 cup cucumber, julienned
  • 1 cup bell pepper, sliced
  • 1 cup carrots, julienned
  • 1/4 cup green onions, chopped
  • 1/4 cup sesame seeds
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Cook the noodles by bringing a large pot of water to a vigorous boil, then add your noodles and cook according to package instructions until al dente. Drain and rinse under cold water.
  2. Combine the cooled noodles, cucumber, bell pepper, carrots, green onions, and sesame seeds in a large mixing bowl.
  3. Make the dressing by whisking together the soy sauce, sesame oil, minced ginger, rice vinegar, and honey or maple syrup in a small bowl.
  4. Dress the salad by pouring the dressing over the noodle mixture and gently tossing until evenly coated.
  5. Adjust seasoning to taste using salt and pepper.
  6. Serve chilled or at room temperature.

Notes

Make-ahead tips: Store in an airtight container in the refrigerator for up to three days. This salad tastes even better as the flavors meld together.
