  • 1/4 cup Ketchup (low-sugar)

Instructions

  1. Preheat your oven to 425°F (220°C). Dice the red potatoes into small cubes, toss them with olive oil, salt, and pepper, then spread them evenly on a baking tray. Roast for about 30-35 minutes until crispy and golden, turning them halfway through for even cooking.
  2. In your cast iron skillet, add a splash of olive oil over medium heat. Stir in the diced onions, cooking until they turn golden brown, about 15 minutes.
  3. Increase the heat and add your ground beef to the skillet. Break it apart with your spatula and smash it down into the pan, allowing for an irresistible crust to form. Cook until browned, about 5-7 minutes, and mix in the Cajun seasoning.
  4. In a mixing bowl, whisk together the mayo, ketchup, mustard, and a pinch of salt and pepper.
  5. To assemble your bowl, start with mixed greens, then layer in the roasted potatoes, ground beef, caramelized onions, shredded cheese, and a drizzle of your creamy sauce, finishing with pickles.
