  • 1 lb kielbasa, sliced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Sauté the chopped onion and bell pepper for about 5 minutes until softened and fragrant.
  3. Add the minced garlic and cook for another minute.
  4. Brown the sliced kielbasa in the skillet, stirring occasionally, for about 5-7 minutes.
  5. Combine the rice, paprika, salt, and pepper, stirring until well mixed.
  6. Pour the chicken broth over the mixture and bring to a boil.
  7. Simmer the skillet on low heat, covered, for about 20 minutes.
  8. Remove from heat and let sit covered for an additional 5 minutes before fluffing the rice with a fork and serving.
