Santa Fe Chicken Foil Packets

Delightful foil packets filled with tender chicken, black beans, corn, and vibrant vegetables, topped with melted cheese for a comforting Southwestern meal.

  • 4 boneless, skinless chicken breasts
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn, thawed if frozen
  • 1 bell pepper, diced
  • 1 cup salsa or Rotel tomatoes with chilies
  • 1 cup shredded Mexican blend or Monterey Jack cheese

Instructions

  1. Preheat your grill to medium-high heat or your oven to 375°F.
  2. Prepare your foil sheets by cutting large pieces and spraying them with nonstick cooking spray.
  3. Season the chicken with chili powder, garlic powder, salt, and black pepper.
  4. Assemble the packets by placing seasoned chicken in the center and topping it with black beans, corn, diced bell pepper, and salsa.
  5. Fold the foil edges together to create an airtight packet.
  6. Cook on the grill for 20–22 minutes or in the oven for 25–30 minutes, flipping halfway through.
  7. Add cheese, return to grill or oven for 2–3 minutes until melted.
  8. Garnish with optional toppings and serve.

Notes
