Rooster’s Beak

A vibrant dip bursting with fresh tomatoes, zesty lime, and spicy jalapeño, perfect for gatherings.

Ingredients

  • 3 large tomatoes, diced
  • 1 medium onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 jalapeño, seeded and minced
  • Salt, to taste

Instructions

  1. Combine the diced tomatoes and finely chopped onion with the minced jalapeño in a mixing bowl.
  2. Add the chopped cilantro and freshly squeezed lime juice.
  3. Season with salt to taste and mix everything well.
  4. Let the mixture sit for about 10 minutes to allow flavors to mingle.
  5. Serve fresh as a dip, taco topping, or a side dish.

Notes

For a milder flavor, substitute jalapeño with bell pepper. Make-ahead options are available for better flavor integration.
