  • 1 cup feta cheese, crumbled
  • 2 cups fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Toothpicks or kitchen twine for rolling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the feta cheese, chopped spinach, sun-dried tomatoes, and minced garlic in a bowl.
  3. Season the chicken breasts generously with salt and pepper.
  4. Place a portion of the filling onto each chicken breast and roll them up tightly.
  5. Heat olive oil in a skillet over medium heat, then add the rolled chicken and sear for 2-3 minutes on each side.
  6. Transfer the seared chicken to a baking dish and bake for 20-25 minutes.
  7. Remove from the oven and let them rest before serving.
