Roasted Garlic and Zucchini Ciabatta: A Flavorful Delight!

A delicious ciabatta bread topped with roasted garlic and zucchini, perfect for a flavorful appetizer or side dish.

  • 1 loaf of ciabatta bread
  • 1 medium zucchini, sliced
  • 1 head of garlic
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the top off the head of garlic, drizzle with olive oil, and wrap in foil.
  3. Place the wrapped garlic in the oven and roast for about 30-35 minutes.
  4. While the garlic is roasting, toss the zucchini slices with olive oil, salt, and pepper.
  5. Spread the zucchini on a baking sheet and roast in the oven for about 15-20 minutes until tender.
  6. Once the garlic is done, squeeze the roasted cloves out of their skins into a bowl and mash them.
  7. Slice the ciabatta bread in half and spread the mashed garlic evenly on both halves.
  8. Top with the roasted zucchini slices.
  9. Return the ciabatta to the oven for an additional 5-10 minutes until the bread is crispy.
  10. Garnish with fresh herbs if desired and serve warm.

Notes

  • For a spicier kick, add red pepper flakes to the zucchini before roasting.
  • This dish can be served as an appetizer or a side dish.
  • Leftovers can be stored in an airtight container for up to 2 days.
