Ricotta Pistachio Honey Bites

Delightful bites of creamy ricotta, nutty pistachios, and sweet honey, perfect for any occasion.

Ingredients

  • 1 cup ricotta cheese
  • 1/2 cup pistachios, chopped
  • 2 tablespoons honey
  • 1/4 teaspoon vanilla extract
  • A pinch of salt
  • Additional pistachios for topping
  • Honey for drizzling

Instructions

  1. In a mixing bowl, combine the ricotta cheese, chopped pistachios, honey, vanilla extract, and a pinch of salt. Stir until all the ingredients meld into a creamy mixture.
  2. With a spoon or your hands, form the mixture into small bite-sized balls, about 1 inch in diameter.
  3. Roll each ball in additional chopped pistachios to lightly coat them.
  4. Place the bites on a serving platter and drizzle with honey before serving.

Notes

Store in an airtight container in the refrigerator for up to three days. Can be made vegan by substituting ricotta with cashew cream and honey with maple syrup.
