Quick One-Pot Chicken Spaghetti

A comforting and easy one-pot meal featuring spaghetti, shredded chicken, and a creamy Parmesan sauce.

  • 8 oz spaghetti
  • 2 cups cooked chicken, shredded
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Heat a splash of oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes soft and translucent.
  2. Stir in the shredded chicken, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring everything to a gentle boil.
  3. Add the spaghetti and stir to combine. Cover the pot, reducing the heat to a simmer for about 12-15 minutes or until the spaghetti is cooked to your liking.
  4. Stir in the grated Parmesan cheese, letting it melt into a creamy sauce.
  5. Serve hot, garnished with fresh basil if desired.
