Quick and Easy Summer Dinner

A vibrant and fresh summer dish combining juicy chicken breast with crisp vegetables, brightened with garlic and lemon.

  • 1 lb Chicken breast, diced
  • 2 Bell peppers, chopped
  • 1 Zucchini, sliced
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1/4 cup Fresh basil, chopped
  • 1 Lemon, juiced

Instructions

  1. Heat the olive oil in a large skillet over medium heat, allowing it to shimmer and become fragrant.
  2. Add the diced chicken breast, cooking until it turns golden brown and is cooked through, about 6–8 minutes.
  3. Introduce the chopped bell peppers and zucchini along with minced garlic to the pan, sautéing until tender, roughly 5 – 6 minutes.
  4. Season with salt, pepper, and basil to taste, gently mixing to meld the flavors.
  5. Squeeze fresh lemon juice over the mixture just before serving.
  6. Serve warm, either on its own or with grains or bread.

Notes

Prep veggies and marinate chicken ahead for quicker cooking. Consider using an air fryer for the chicken for easier preparation.
