Pumpkin Gooey Butter Cake

A delicious blend of gooey butter cake and pumpkin flavors, perfect for autumn gatherings.

  • 1 box yellow cake mix
  • 1/2 cup butter, melted
  • 1 egg
  • 1 (8 oz) package cream cheese, softened
  • 1 (15 oz) can pumpkin puree
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 1/2 cups powdered sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • Whipped cream, for serving

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Combine the yellow cake mix, melted butter, and 1 egg in a medium bowl until mixed, then press evenly into the prepared pan.
  3. Beat the softened cream cheese with an electric mixer until smooth, then add in pumpkin puree, 2 eggs, vanilla extract, powdered sugar, cinnamon, nutmeg, and ginger, mixing until creamy.
  4. Pour the filling over the crust and spread evenly.
  5. Bake for 40-45 minutes until edges are set and the center is still gooey.
  6. Cool for 15 minutes, then chill in the refrigerator for at least an hour.
  7. Slice into squares and serve chilled, topped with whipped cream and a sprinkle of cinnamon.

Notes

For a twist, consider adding chocolate chips or different spices.
