Pistachio Vanilla Cake

A moist cake infused with the nutty sweetness of pistachios and complemented by rich vanilla, topped with creamy frosting.

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup pistachios, finely ground
  • Few drops of green food coloring (optional)
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and generously grease and flour two 9-inch round cake pans.
  2. Cream the softened butter and granulated sugar together until light and fluffy, about 3–5 minutes.
  3. Add the eggs one at a time, beating well after each addition, and stir in the vanilla extract.
  4. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with the whole milk, starting and ending with the dry ingredients.
  6. Fold in the finely ground pistachios and add food coloring if desired.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Allow the cakes to cool for 10 minutes, then transfer to wire racks to cool completely.
  10. Beat cream cheese and butter until smooth, then gradually add powdered sugar to frost the cooled cakes.
  11. Slice and serve, enjoying every bite!
