Instructions

  1. Marinate the chicken: In a mixing bowl, toss the diced chicken with olive oil, smoked paprika, chili powder, garlic powder, and salt, ensuring every piece is evenly coated. Let the chicken marinate for about 15 minutes.
  2. Cook the chicken: Heat your large skillet over medium-high heat. Once hot, add the marinated chicken in a single layer. Allow it to cook undisturbed for about 3 minutes.
  3. Stir and cook through: Gently stir the chicken, ensuring even cooking, and continue cooking for another 4 to 5 minutes or until fully cooked through.
  4. Prepare the salsa: In a separate bowl, combine the finely diced pineapple, red onion, cilantro, and lime juice. Mix gently to form a refreshing salsa.
  5. Warm the tortillas: Warm your tortillas in a dry skillet or microwave until they become soft and pliable.
  6. Assemble the tacos: Layer the cooked chicken onto each tortilla and top generously with the fresh pineapple salsa.
