Peach Hand Pies

Deliciously sweet and flaky peach hand pies, perfect for summer picnics and gatherings.

Ingredients

  • 3 cups fresh peaches, peeled and diced
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • 1 package pie crusts (2 crusts)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the peach filling by mixing the diced peaches, sugar, lemon juice, and cinnamon in a medium bowl.
  3. Roll out the pie crusts on a floured surface until they are about 1/8-inch thick.
  4. Fill the circles with a generous spoonful of peach filling.
  5. Seal the hand pies by folding the crust over and crimping the edges with a fork.
  6. Brush the tops with the beaten egg using a pastry brush.
  7. Bake on a parchment-lined baking sheet for 15-20 minutes until golden brown.
  8. Cool for a few minutes and enjoy warm!

Notes

Make ahead and refrigerate or freeze individual hand pies for later baking.
