  • Egg roll wrappers
  • Oil for frying
  • 1 vanilla bean for sauce
  • 1 cup heavy cream

Instructions

  1. Combine diced peaches, sugar, cinnamon, and cornstarch in a mixing bowl.
  2. Lay out an egg roll wrapper and spoon a tablespoon of peach filling into the center.
  3. Fold the wrapper according to package instructions, sealing the edges with water.
  4. Heat oil in a deep fryer or skillet to 350°F (175°C).
  5. Fry egg rolls for about 2-3 minutes per side until golden brown.
  6. Whip the heavy cream until soft peaks form, then fold in vanilla bean seeds.
  7. Serve warm egg rolls drizzled with vanilla bean sauce.
