  • 1 cup milk (or a dairy-free alternative)
  • 1 egg
  • Pinch of salt
  • 2 tablespoons melted butter
  • 1 cup plain yogurt (Greek yogurt adds creaminess)
  • Fresh fruits (such as strawberries, blueberries, bananas, or kiwi)
  • Honey or maple syrup (for added sweetness if desired)

Instructions

  1. Prepare the pancake batter: In a large mixing bowl, combine flour, sugar, baking powder, and salt. In a separate bowl, whisk together milk, egg, and melted butter. Combine wet and dry ingredients, stirring until just mixed; a few lumps are fine!
  2. Heat your skillet: Place your non-stick skillet over medium heat and allow it to warm. Lightly grease it with butter to prevent sticking.
  3. Cook the pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form and edges look set. Flip and cook for another 1-2 minutes until golden brown. Repeat with remaining batter.
  4. Prepare the creamy filling: In a bowl, combine yogurt with honey or syrup, mixing until smooth. Gently fold in your favorite diced fruits.
  5. Assemble the taco: Take a pancake, spoon a generous amount of filling down the center, and fold over to form a taco shape. Repeat with remaining pancakes.
  6. Serve and enjoy: Arrange pancakes on a platter, drizzle with syrup, or sprinkle with powdered sugar.
