- 1 lb beef sirloin, thinly sliced
- 4 slices of bacon, chopped
- 1 medium onion, diced
- 1 green bell pepper, diced
- 4 cups beef broth
- 1 cup heavy cream
- 2 cups shredded provolone cheese
- 1 tsp garlic powder
- 1 tsp black pepper
- Salt to taste
- 4 slices of bread for toasting
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add the sliced beef and cook until browned.
- Add the diced onion and green bell pepper, cooking until softened.
- Pour in the beef broth and bring to a simmer.
- Stir in the heavy cream, garlic powder, black pepper, and salt.
- Mix in the shredded provolone cheese until melted and creamy.
- Meanwhile, toast the bread slices and top with additional cheese if desired.
- Serve the soup hot, garnished with crispy bacon and cheesy toast on the side.
Notes
- For a spicier version, add sliced jalapeños.
